Ingredients

For the Muffins:

  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • Pinch of salt
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¾ cup unsalted butter, room temperature (Kerrygold recommended!)
  • 1 cup granulated sugar
  • ⅓ cup brown sugar
  • 1 tablespoon orange zest, finely grated
  • 3 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 1 cup full-fat sour cream, room temperature
  • ⅓ cup orange juice (freshly squeezed is best)
  • 2 cups cranberries (fresh or frozen—do NOT thaw if frozen)

Optional Orange Glaze:

  • 1 cup confectioners’ sugar, sifted
  • 1 tablespoon freshly squeezed orange juice (more if needed)
  • 1 teaspoon orange zest, finely grated

Instructions

For the Cranberry Orange Muffins:

  1. Preheat the oven to 350°F (180°C). Line a 12-cup muffin tin with your favorite paper liners. Set aside.
  2. In a large bowl, sift together the flour, baking powder, salt, cinnamon, and nutmeg. Set aside.
  3. Using a handheld mixer or a stand mixer fitted with the paddle attachment, beat the butter, granulated sugar, brown sugar, orange zest, and vanilla extract on medium speed until light and fluffy (about 3–5 minutes). Scrape the sides and bottom of the bowl as needed.
  4. Add the eggs one at a time, beating well after each addition. Scrape the bowl again to ensure everything is fully combined.
  5. In a small bowl, whisk together the sour cream and orange juice.
  6. With the mixer on low, alternate adding the flour mixture and the sour cream mixture to the batter, starting and ending with the flour mixture. Mix until just combined—do not overmix.
  7. Gently fold in the cranberries with a spatula until evenly distributed.
  8. Divide the batter evenly among the prepared muffin tins using a standard ice cream scoop. This recipe makes 19–20 muffins.
  9. Bake for 20–25 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  10. Allow the muffins to cool in the pan for 15 minutes before transferring them to a wire rack to cool completely (about 45 minutes to 1 hour).

For the Orange Glaze (Optional):

  1. In a small bowl, whisk together the confectioners’ sugar, orange juice, and orange zest until smooth. Adjust the consistency with more orange juice if needed.
  2. Drizzle the glaze over the cooled muffins before serving, or let it set for a slightly firmer finish.
